Vegan Cranberry Oat Cookies


These cookies are amazing. I found a recipe on pintrest and adjusted it to make it lower in calories and sugars. They are delicious and hearty almost like a granola bar style cookie. They are very sweet from the banana and cranberry. Delicious!!!

Cranberry Oat Cookies
Ingredients:
2 large ripe bananas
2 c. rolled oats
1/3 c. applesauce
1 tsp. vanilla extract
1 tbsp. ground flax
1/2 c. dried cranberries
2 tbsp. splenda

Directions:
Preheat oven to 350 degrees. Using a fork, mash the bananas in a bowl. Stir in oats, applesauce, dried cranberries, flax and vanilla extract. Mix batter well. Drop by rounded spoonfuls onto a greased cookie sheet. Bake for 20 minutes.

Lemon Berry Muffins - no sugar added



Lemon Berry Muffins


2 cups all-purpose flour
1 cup Splenda
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
4 Tbsp fresh lemon juice
3/4 cup nonfat milk
1/3 cup plain nonfat yogurt (preferably Greek-style)
1/3 cup canola oil
2 eggs
1 tsp pure vanilla
1 cup frozen mixed berries, thawed


Preheat oven to 350°F. Add paper liners to a 12-cup muffin pan.

In a medium bowl, combine the flour, Splenda, baking powder, baking soda, and salt. Mix well. In a large bowl, combine the lemon juice, milk, yogurt, and oil. Beat at medium speed for 1 minute. Add in one egg, and continue to beat for 1 minute. Add in some of the flour mixture, and beat for 1 minute. Add in another egg and the vanilla, and beat for 1 minute. Add the remaining flour, and beat for 1 minute. Gently fold in the berries by hand. Pour the batter into all the muffin cups. Bake for 25 to 30. Allow them to cool in the muffin tin for 5 minutes. Remove the muffins, place on a cooling rack, and cool completely.

Blue Cheese Bacon Dip


I found this recipe about a year ago on a blog and I changed it up a bit to my liking. It is a great dish to take to any dinner party where snacking or appetizers are involved.

Blue Cheese Bacon Dip

8 oz. fat free cream cheese
1/2 cup soy milk (half & half would work too)
7 slices turkey bacon, cooked and chopped
5 oz. blue cheese crumbles
4 green onions, chopped
2 cloves garlic, minced
salt and pepper to taste

Preheat oven to 350 degrees.
Cook turkey bacon and set aside. Beat together the cream cheese and milk. Add in green onions, garlic, blue cheese and salt and pepper. Mix well. Add turkey bacon. Pour into a 2 quart casserole dish that has been sprayed with cooking spray. Bake for 30 minutes. Allow to cool. Best if served after chilling in refrigerator for a few hours. Serve with your favorite crackers and dipping veggies.
