Chicken Croquettes

Before frying:

After frying:

1/2 Cup Butter
1/4 Cup Onion, Chopped
2 tsp Salt
1 tsp Pepper
1 1/2 Cups Flour
3 1/2 Cups Milk
8 Cups Cooked Chicken, Chopped in Food Processor
2 Cups Bread Crumbs (I used Panko Bread Crumbs)
8 Cups Canola Oil

Put butter and chopped onion in a large sauce pan and heat until onions are soft. Add salt, pepper, and flour. Mix well with a wire wisk. Add milk. Mix well. Cook until mixture becomes thick, about 10-15 minutes on low heat.

In large bowl, mix chopped chicken and bread crumbs. Add flour milk mixture. Mix well. Form mixture into desired shapes. If your mixture is too sticky, add a little flour.

Heat oil in your deep fryer or in a deep sauce pan on the stove. Once oil is at correct frying temperature, deep fry shaped croquettes for 2-3 minutes until golden brown. Serves 8-10 people.

Serving Suggestion: Serve with Mashed Potatoes and Gravy
