Amy's Marinara

I'm so excited about this dish. It was my attempt at fresh marinara sauce and oh boy did it turn out great. On Sunday I made the original batch, but didn't have time to cook it down to a nice thickness that we all know and love. Monday night I was able to take the time to cook it down for about 2 hours on low and then added some last minute yummies to the sauce. Dang it was good!

Basic Sauce

4 quarts home grown canned stewed tomatoes
2 small onions
2 T sugar (optional)
2 T dried oregano
2 T dried basil
2 large cloves garlic
salt and pepper to taste

In blender add one quart tomatoes, onions, and garlic. Blend for one minute. Pour into sauce pan to simmer on medium. Add one quart of tomatoes to sauce pan and blended mixture. Add sugar, oregano, basil, salt and pepper. Then in your blender, blend the remaining 2 quarts of tomatoes for about 30 seconds or so; add to the sauce pan. Simmer sauce for 30 minutes- 2 hours between low and medium. This depends on how thick you like your sauce. Serve over a bed of your favorite whole wheat noodles.

Extra Yummy Sauce

5-10 minutes before serving add
1 pound browned ground sweet Italian lean Turkey sausage
8 oz sauteed fresh mushrooms
3 cups chopped fresh spinach
1 (12 oz) can tomato paste
