Quinoa Pilaf

Quinoa is a new family favorite. It's a grain high in protein. It can be served so many different ways. This recipe came off the back of a package of quinoa. The original recipe called for walnuts.

1 Tbsp vegetable oil
1/2 chopped onions
2 carrots, chopped
1 cup Tri-color Quinoa
2 cups vegetable broth
3/4 chopped roasted almonds (I used raw and toasted them myself.)
1/4 cup chopped fresh parsley

Heat oil in a saucepan over medium-high heat. Cool onions in oil for 5 minutes or until translucent. Add carrots and cook 3 minutes more. Stir in quinoa and vegetable broth and bring to a boil. Reduce to a simmer, cover and cook for 15-20 minutes or until quinoa is tender and fluffy. In a bowl toss quinoa together with almonds and parsley. Serve hot or at room temperature.
