Favorite Scrambled Omelette

1 teaspoon extra virgin olive oil
chopped white onion
chopped red, yellow, orange bell pepper
shredded carrot
chopped broccoli (or the good stuff at the bottom of frozen broccoli bag!)
2 eggs, beaten (with a teaspoon of water or milk, for fluffiness.)
chopped baby spinach
salt and pepper

optional: low-fat string cheese or grated cheese or cream cheese!

1. Add oil, onion, peppers, carrot and broccoli to frying pan. cook, stirring occasionally til onion is transparent.
2. Add beaten eggs, stirring occasionally. Add chopped spinach.
3. When eggs are almost done, add cheese. (i like adding a chopped cheese stick, when i was pregnant i got the wild idea about adding small dollops of cream cheese... it's actually really tasty. or you could leave the cheese out completely and it's still really good!)

Honey Wheat French Bread

This is another tweak to Michelle's French Bread Recipe. My first tweak is  here. I don't actually use agave or sugar anymor...
