Ground Turkey Taco Style
One of Enoch's favorites are soft tacos. Here is a little something I whipped up the other day.
1 1/2 pounds Low-Fat Ground Turkey
1 red pepper, diced
1 yellow pepper, diced
1 cup shredded carrots, diced
2 cups chopped baby spinach
2 cups corn
1 cup chopped cilantro
2 cloves garlic
1 small onion
2 Tbsp Cumin
2 tsp chili powder
1 tsp red pepper flakes
Throw everything into the pot minus the spinach, cilantro and corn with a small splash of olive oil for about 15 minutes or until meat is browned and veggies are crisp tender. About 5 minutes before serving add the spinach, cilantro and corn. Mix well, serve warm.
I served this wrapped in whole wheat tortillas with Queso Fresco Cheese. It was a big hit with everyone.
