Blender Tortilla Soup

The following recipe is for a quality high-powered blender. (ie. Vita Mix, Health Master, BlendTEC, Warning). a regular blender can be used, but quality and taste may be different!) Ask me... do i love my Vita Mix??? YES! Definitely YES!
Soup Base:

3 cups low sodium and MSG free chicken, beef, or vegetable broth (i use bullion cubes)
1 Roma tomato, halved
1 carrot, halved
1 stalk celery, halved
1 thin slice of onion, peeled
1 garlic clove, peeled
1 thin slice of yellow squash
1 thin slice of red bell pepper
1 thin slice of cabbage
1 mushroom
salt and pepper, to taste
1 teaspoon taco seasoning
dash cumin
1/2 fresh jalapeno

Add In Options:

1/2 cup cooked chicken,
1/2 c canned corn
1/2 c black beans
baked tortilla chips

1. Place all soup base ingredients into blender and secure lid
2. turn blender on low, and quickly increase speed to high
3. Blend for 5-6 min (8 min for Health Master.) or until heavy steam escapes from vented lid.
4. stop blender, add any add ins, plug opening. blend on low for additional 10 seconds.

Best part:
per 1 cup (240 ml) serving: 36 Cal; 3 g protein; 1 g tot tat; 0 sat fat; 5 g Carb; 1 fiber; 2 gram sugar; 18 mg Calcium, 0 mg Iron, 60 mg Sodium; 2258 IU Vit A; 7 mg Vit C; 0 mg Cholesterol
