Crunchy Chicken Salad


This salad is a super quick fix and very tasty.

1/3 cup olive oil
3 tbsp white vinegar
3 tbsp sugar
1 tbsp poppy seeds
1/4 tsp black pepper

12.5 oz can Cooked and Shredded Chicken (I use Costco brand)
4 cups chopped romaine lettuce
1 cup baby spinach
2 cups diced celery
3 green onions, chopped
1 cup chow mein noodles (such as La Choy)
1 cup sliced almonds (optional)

In a small bowl, whisk olive oil, vinegar, sugar, poppy seeds and pepper set aside.
Mix remaining ingredients together and toss in the dressing. Serves 4
