Whole Wheat Blueberry Muffins



Years ago my husband Kevin found a super simple muffin recipe that was packed with flavor. I'm trying to watch my calories so I thought I'd try to improve upon this delicious recipe.

1/2 cup applesauce
1 cup sugar
2 eggs
1 cup flour
1 cup whole wheat flour
1/2 tsp salt
2 tsp baking powder
1/2 milk
1 tsp vanilla extract
2 1/2 cups fresh blueberries
sugar -for sprinkling (optional)

Spray muffin pan or place cupcake papers
Preheat oven to 375 degrees

In a large bowl with mixer at medium speed, cream apple sauce and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Combine flour, baking powder and salt. Add alternately to creamed mixture with milk and vanilla. Crush 1/2 cup berries and add to batter. Fold remaining berries into batter and spoon into muffin pan. Sprinkle with sugar. Bake 30 minutes. Cool in pan 5 minutes and turn onto wire rack.

Makes 24 original size muffins. According to livestrong.com each muffin is 94 calories.
