Spanish Spinach Eggs

4 corn tortillas
2 slices low fat Canadian bacon
2 slices low fat cheese
2 large egg whites
1 large egg
1 1/2 chopped fresh spinach
pepper -to taste
salsa -optional

Cut corn tortillas into 8 wedges each. Spray pan with non-fat cooking spray and brown tortillas. Throw in chopped spinach and mixed eggs; scramble. While egg mixture is cooking place a slice of bacon on your plate. When the eggs are fully cooked take half the mixture and place over the bacon. Add a slice a cheese and allow for the cheese to melt before eating. Garnish with salsa. Serves 2

According to it's only 324 calories per serving.
