Citrus Chicken Skewers

4 lbs Chicken, Breast
1 cup Orange juice, raw
4 oz Lemon Juice, raw
2 tbsp Canola Oil
1/5 tsp Salt
1/2 tsp Salt
1/2 tbsp Black Pepper
4 tbsp Lime Juice
1 tsp Low Sodium Soy Sauce
2 tsp Brown Sugar

Soak wooden skewers in water for 30 minutes. Whisk together: orange juice, lemon juice, oil, salt and pepper. Add chicken breast chunks and let marinate for 30 minutes.

Whisk peanut butter, lime juice, soy and brown sugar and place in a small dipping bowl.

Heat grill.
Place 4 chicken breast chunks onto each skewer -grill approx 2-4 minutes for each skewer. Remove from grill add to platter with peanut sauce.

note: I baked my chicken skewers instead of grilling them. Also, I would suggest only using 1/2 of the lime juice for the dipping sauce and then add more to taste before just dumping it all in. The sauce sounds really weird, but when eaten with the chicken it's a great combination.
