Thin Mint Cookies

1 pound bag of Dark Chocolate and Mint flavored melting chocolates (Found on the candy making isle at your favorite craft store.)
Ritz Crackers

Melt chocolates (I divide the bag in 3rds and microwave every 30 seconds until it is perfectly smooth. Dip in your crackers, allow cookies to cool. (I like mine cold right out of the freezer.)

Verdict: Enoch and I loved them. Kevin (my husband) wasn't a fan of the buttery Ritz part of the cookie (he still ate them though). Next time I'll try it with a shortbread or wafer cookie to please Kevin's palate.
