Baked Oatmeal

I have breakfast on my mind. I am not usually an oatmeal kind of person, but man is this DE-LICIOUS!
  • 2 1/2 cups rolled oats
  • 1/4 cup oat bran
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 2 cups milk
  • 1 egg, beaten
  • 1/3 cup applesauce
  • 1/3 cup cooking oil
  • 1/3 cup granulated sugar
  • 1/3 cup packed brown sugar
  • 2-4 cups fresh fruit (two for baking, two for topping with)
  • optional: yogurt, milk, cream, ice cream
Preheat oven to 400 degrees. In large mixing bowl, stir rolled oats, oat bran, baking powder, salt and cinnamon. In medium bowl, stir together milk, egg, applesauce, oil and sugars; add to oat mixture, stirring until combined. Turn into lightly greased 2-quart casserole dish. Bake, uncovered, for 20 minutes. Stir mixture and gently fold in 2 cups of fruit. Bake, uncovered, for 20 minutes more or until top is lightly browned. Serve with yogurt and fresh fruit on top, or in milk, cream, or with ice-cream! For the fruit baked inside the oatmeal, I typically use apples, blueberries, or both! The apples I chop and boil for about 5 minutes before adding to the oatmeal so that they are tender enough. For the fruit on top, our favorites are fresh strawberries, peaches and blueberries.
